Sprout Scramble

Adding sprouts to your favourite recipe is easy; just toss a handful in and prepare as usual. For those who are new to sprouting and want to try new things, here’s a quick and easy way to use up your sprouts. Oh, and did I mention healthy and tasty?

  • 1 tbsp. coconut oil
  • 1/2 small onion, chopped
  • 1 cup Crimson Lentil Sprouts (or sprouts of your choice)

Melt the coconut oil in a small skillet. Add the onions and sprouts. Cover and let cook for 2-3 minutes, then add the egg mixture.

  • 2 eggs
  • 1/2 tsp. pepper
  • pinch of seasoning salt
  • 1 tsp. basil

Pour the egg mixture over the sprout mix and allow to cook for a couple of minutes. Mix occasionally to ensure your egg is cooked all the way through.

Remove from heat, put on a plate and enjoy. I added a slice of Monteray Jack cheese to mine and loved it.

I had to top it with cheese; it just seemed like the right thing to do.
