Sprout Salad

This is a quick salad to make, and if you’re really pressed for time you can just add the dressing and eat it. I prefer the salad to sit for an hour or more just so the flavours merge throughout. (If you’re new to sprouting, get my FREE Sprouting Guide here.)

Dressing:

½ cup Miracle Whip (or store brand Whipped Dressing)

1 tbsp. lemon juice

2 tsp. sugar

Mix the above together and refrigerate while you prepare the rest of the salad.

Ingredients:

1 cup alfalfa sprouts

2 cups Crunchy Bean Mix sprouts

1/3 cup pumpkin seeds

2/3 cup dried cranberries

1 cup cubed cheese (small cubes)

Combine the ingredients together using two forks so you’re not squishing the sprouts. Add the dressing and refrigerate for at least an hour. (As stated above, this isn’t necessary.)

This is the ingredients mixed together before the dressing was added.
The dressing is mixed in with the salad ingredients.
Here it is in a pretty bowl after being in the fridge for over an hour. Yummy!

Variations:

  • Sunflower seeds
  • Crumbled bacon
  • Sliced almonds
  • Chopped celery
  • Green onion

You may use any type of sprouts you wish. I personally like the Crunchy Bean Mix because it has a nutty flavour.
